Anyway, here is my go-to pancetta fried rice recipe as promised. This dish is in constant rotation at our house, and the leftovers are always brought to work along with a huge bottle of Sriracha. It's a super easy and simple one-pot meal that can be whipped up in less than 30 minutes.

Bring to a quick boil and immediately turn down the heat to low. Simmer until the carrots are just starting to soften and the peas are cooked, about 5 minutes. Drain and set the carrots and peas aside. In the same wok, heat a bit of oil on medium heat. Add in the pancetta and pan fry until crispy, about 5 minutes.

Heat 1 tablespoon olive oil in a large skillet or wok over medium high heat. Add the pancetta and cook, stirring occasionally, until brown and crispy, about 8 minutes. Transfer to a paper towel-lined plate. Add the garlic to the pan and saute until fragrant, about 1 minute.

Add eggs, Worcestershire, and sesame oil to the skillet. Quickly toss the eggs with the rice to scramble and cook them—they should coat most of the rice. Again, press the rice into a single layer for about 1 minute, then flip it and repeat a few more times to brown the rice and egg. Return the Brussels sprout mixture to the skillet with the rice.

Heat the oven to 425°F. Remove the plastic from the tray and cover with foil. Fresh: Bake for 20 minutes. Stir, re-cover, and bake for 20 to 25 minutes more, or until heated through.
